The Axle Chenin blanc is winemaker Alexander Milner’s own label. He writes: “My wife loves the food friendly and more textured styles of Chenin blanc, so I thought it would be fun if I could make her one. We were wanting to make a style that was low in alcohol, allow us to work completely naturally, but yet have a balance of acidity that would have you coming back for more. We spent the most part of the winter of 2017 tasting and visiting various vineyards, to find the one that fitted our desired profile. Welcome our Darling vineyard, a registered heritage vineyard, with the Old Vine Project as being older that 35 years. A very special vineyard indeed.” Vinification; Basket pressed and allowed to settle for 24 hours. It is then racked to old 225L barrels with careful addition of fine sediment to each barrel. Spontaneous fermentation begins. After fermentation regular batonnage is given until late May. During winter we keep the barrels topped and quiet. In the Spring we ready for bottling and after 9 months we bottle.
