The granite slopes of the Simonsberg mountain are known within South Africa as "Cabernet country" for a good reason. Cabernet has grown here for over 300 years and produces classic, elegant examples of the varietal. Aromas of cassis and Moroccan mint underlined by robust tannins and a long finish.

<p>Cabernet grapes grown in this area rarely lack color or structure, making a light touch the cornerstone of the cellar's practices. Aiming for a light extraction, the juice is gently pumped over the skins twice daily during fermentation. This wine is matured in 225l French oak barrels for 18 months.</p>
<p>South Africa may be defined as a New World wine producer but this can be a bit of a misnomer: these vineyards are planted in some of the world’s oldest soils. Decomposed granite soils give this wine an earthy, cool and distinctively Old World character.</p>
